Tempura batter
This recipe makes a light and crispy coating.
2 c self-rising flour
1 c cornstarch
2-1/3 c ice water
pinch salt
Shortly before using, mix all ingredients until smooth. If necessary, add a bit more water or flour to get the desired consistency. Dip individual items in batter, remove with chopsticks, and transfer immediately to the hot oil before the batter drips off.
